1.½ DAY IN ORGANIC DISCOVERY LUNCH STAY/DINNER STAY

image004You could spend a year in Hoi An and not discover all of its charms. However, if you only have a few days and you want to experience the delights of the local countryside then the half day Organic Discovery Tour is a good option. The purpose of our tour is to give visitors a safe opportunity to discover the local Hoi An people and its agricultural – where you can see the inner life of the local farmers on their organic herb garden. The half day “Organic Discovery Lunch Stay/ Dinner Stay” is available everyday – with both a morning and afternoon program available.

PROGRAM

image0038.30am or 3.30pm :After a short drive through the local countryside we arrive at Tra Que Village , and the home of your host, Mr Tuan. A welcome drink of freshly picked fruits is waiting, before we take a walk around the village and learn about the history and customs of this charming village. We walk through the organic herb gardens where hundreds of local farmers work their fields using the traditional methods of hundreds of years ago – no electrical machinery here.

We return to the home of Mr Tuan, and this is where the real fun begins. Everyone is given farming instruments, and we set about joining the farmers in preparing the land for sewing or planting. Our farmer describes the traditional farming methods while we help fertilize the garden using seaweed from the local river, and then water it using huge tin cans strapped to our back. Time is then spent picking vegetables and herbs, and learning how to wrap them to prevent damage. Sharing with you about the traditional methods of gardening in organic way.

img_2340Many of the local herbs are used by the farmers for traditional village medicines. You will have a chance to enjoy the herbal foot massage with a real farmer concept.

Experience half day to be in the farmer house you will have the opportunity to interact with local farmers and learn about all the ingredients to be used in daily cooking life.

It’s now time to try are hands at making the village speciality named “Tam Huu” spring rolls – using the local herbs and vegetables we have just picked or Xeo Cake ( Banh Xeo). We then sit down and enjoy a lovely local meal.

Day Deluxe Cooking Class In The Organic Herb Garden

image001We start the day (8 am) from the hotel – our meeting point. Arriving at Organic Herb Village we have a chance to freshen up before we walk through the herb gardens where local farmers work their fields using the traditional methods of hundreds of years ago – no electrical machinery here. Our family chef will explain you all about the herbs in cuisine and medicine. We pick fresh herbs in the garden for our cooking lesson later. Working together with our family Chef we learn the traditional ways of preparing and cooking Vietnamese food from scratch. Using the freshest organic ingredients direct from our garden and traditional Vietnamese utensils (still in use today) we cook 4 famous dishes.  Including the secret family dish “Steamed Free Range Chicken in Herbal”. After the class we sit down and a chance to savour the dishes we have prepared. Leisurely with (20 minutes) herbal foot massage.

FULL DAY “RICE, HERB AND FISH TALKS TOUR”

Dawn at Tra Que vegetable villageHoi An is located at the heart of the colourful delta of the Thu Bon River. The people of our region depend on the water of the river for their livelihood and the delta is teeming with wildlife. Most picturesque and mysterious is the village of Cam Thanh, nestled among the lagoons near the estuary and surrounded by water coconut forest, a natural forest which is farmed by local villagers. Water coconuts has been used for thousands of years as a superior thatching material, and the villagers maintain their traditional occupation as suppliers of palm roofs and walls are perfect for the tropical climate and moonsson rains. Rice, Herb and Fish Talks tour will bring you to experience the way of Hoianese group living. The purpose of our tour is to give visitors a safe opportunity to discover the local Hoi An people and its agricultural – where you can see the inner life of the local fisherman and farmers on their organic herb garden.

PROGRAM

Go fishing8.00 am: We will collect you from your hotel in our minivan and drive you to the docks on the Co Co River where your day’s adventure will start.

8.20am: At the dock we will board our boat to take you onto the river and head downstream towards our first fishing destination. The tour is let you understand more about local life. Where we meet and chat with fishermen about their works. You will have a chance to learn how to lift the big fishing net out of the water and how to spread the unique fishing net named “RO” into a professional circle to catch fish and others daily activities of the local fisherman.

Round boat at Tra Que9.00am : We arrive at The Coconut Palm area. Meet a local fishing family who will bring some traditional basket boats for us to board. You will be getting on a very unique round boat (Basket Boat) or Thung Chai in Vietnamese. Learning the technique how to drive the round boat and starting discovering the floristic composition with relaxing and then having fun with catching the special Purple Crabs.

10.20am: A family home constructed from bamboo and water coconut is our tea stop and have a taste of what life is like for traditional fisher-folk. Back to the Bus pick up place.
